Maple Pumpkin & Feta Pearl Cous Cous Salad

INGREDIENTS
- 1/4 Kent pumpkin, chopped and skin removed
- 1 red onion, peeled and sliced
- 1 tbsp olive oil
- 1 large handful of baby spinach
- 100g pearl cous cous, (cooked as per packet instructions)
- 100g feta, crumbled
- 50g walnuts, roughly chopped
- 2 tbsp maple syrup
METHOD
- Place the pumpkin, red onion and olive oil in an Air Fryer Bowl and cook for 20 minutes on 180 degrees or until soft.
- In a large bowl, add baby spinach, pumpkin and onion, cous cous, feta, walnuts and drizzle with maple syrup.
- Give it a good mix through then pour it all into the salad bowl.
- Place the lid on and store in the fridge for when you are ready to eat!
MEAL PREP PRO TIP: This salad can be made in a double or triple batch to get you through a few days. To keep it fresh, just add the baby spinach daily.
